Mushroom Soup

Ingredients
These amounts can be varied, find whatever feels good
- 500g sliced mushrooms, variety of your choice
- 1 onion, 3 cloves of garlic
- 3 rashers of bacon
- 500ml Thickened cream
- 3 dollops of cream cheese
- 2 chicken boullions
- Variety of spices (black pepper, salt, mixed herbs, cayenne)
Directions
- Dice bacon, slice mushrooms, chop onion and mince garlic
- Sautee bacon, onion, garlic until translucent on medium-low heat
- Add mushrooms and spices and cook for 5-10 minutes, set some mushrooms aside for decoration
- Add chicken boullions melted in boiling water
- Bring to the boil then turn down and simmer for 10 minutes
- Mix in thickened cream and cream cheese
- Simmer for another 5-10 minutes
- Take off the stove and cool for a bit
- Use a stick blender and blend until smooth
